Cyclodextrins are a group of cyclic oligosaccharides with a unique hydrophobic cavity structure that may encapsulate other compounds, forming incorporation complexes via host–guest interactions and modifying the properties of the guest molecules. As a result, сyclodextrins and their derivatives are used in a wide range of practical applications in nearly all industrial sectors, including pharmacy, medicine, food, cosmetics, chromatography, catalysis, biotechnology, and textiles. Villiers published the first reference to cyclodextrins in 1891, and since then, and the molecules have remained a great fascination to scientists and industry ever since. Since the mid-1970s, cyclodextrins have been used in the food industry to improve and stabilize the physical properties and taste of products and to enhance the bioavailability of functional and nutritional additives. This review summarizes the main applications of cyclodextrins in food production and highlights the work of Nikolay Glebovich Usanov, one of the leading Russian biotechnology developers of cyclodextrins, who has spent most of his scientific career working with these cyclic carbohydrates.
