This review provides information on the history of the discovery of cyclodextrins and the technology for their enzymatic production from starch. The physicochemical properties of α-, β-, and γ-cyclodextrins, the mechanism of their complexation with hydrophobic substances, and the key factors influencing this process are described. Information on the use of cyclodextrins in various industrial sectors is also provided. Examples of the practical use of cyclodextrins in the food industry are presented for extracting biologically active substances from plant materials, producing inclusion complexes with essential oils, and reducing the bitter taste of milk protein hydrolyzed peptides. This review is dedicated to the memory of N.G. Usanov, who made a significant contribution to the development of cyclodextrin research and its application.
